Buffalo chicken quinoa bitesFor the Bites:

  • 3 tbsp. whole wheat flour
  • ¼ cup low fat cheddar cheese, shredded
  • 3 chicken breasts
  • 1 cup cooked quinoa
  • ¼ cup hot sauce
  • 1 tbs. pepper
  • cup panko breadcrumbs

 

 

 

 

These bites are a popular hit as an appetizer at parties because they are a great spin on Buffalo wings that are usually not very healthy.  They taste great, are a good alternative to other common unhealthy appetizers, and are easy to make.

 

To start, trim the fat off the chicken breasts and cut into fourths. Place the cut chicken breasts into a pot of boiling water for about 15 minutes until they are fully cooked and can easily be pulled apart. Boiling the chicken is a healthy way to cook chicken because it keeps the chicken moist without using any excess fat.  Shred the chicken using two forks.

 

Combine the chicken, flour, cheddar cheese, quinoa, hot sauce, pepper, and breadcrumbs together in a bowl and mix until all ingredients are combined. Cover the bowl with plastic wrap and stick it in the fridge for about an hour.  This will harden the mix so it is easier to form into bite-sized pieces. While the mixture is chilling, preheat the oven to 400 degrees After the mix has been chilled, size the mixture into little balls that are a little over a tablespoon in size. Place the bites onto a greased cookie sheet and bake for about 10-15 minutes. Serve with dipping sauce.

 

 

For the dipping sauce:

  • 1 cup low fat plain Greek yogurt
  • ½ lite sour cream
  • ¼ cup blue cheese crumbles
  • 1 tbs. fresh dill

 

Combine all ingredients and stir.
