oatmeal bakeBase Mixture:

  • 1 cup quick oats
  • ¼ cup agave syrup
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • Pinch salt
  • ¾ cup milk
  • 2 eggs or ¼ cup egg whites
  • 2 teaspoons of vanilla

Optional:

  • ½ banana
  • ¼ cup blueberries
  • Handful of pecans and almonds

Preheat oven to 350 degrees. Spray a nonstick spray in a loaf dish. Combine dry ingredients in a mixing bowl. In another bowl, combine all wet ingredients and mix. Pour fruit into wet mixture. Place the dry mixture in the dish and pour wet ingredients over the dry. Bake for about 30 minutes until golden brown and cooked through. Top with extra berries and nuts.
