Kale Salad with Cranberries and citrus dressing
1 bag precut and washed kale
1 tsp salt
combine ingredients in glass jar and shake:
3 Tablespoons maple syrup
3 Tablespoons citrus (mix of lemon and lime), usually equates to 1/2 of each, juiced
1/2c. extra virgin olive oil.
Empty bag of kale into a large bowl and sprinkle with salt. Massage kale until it starts to look “wet” and the leaves become soft. Add dressing and toss to distribute throughout the salad. Let the salad sit for at least 20 minutes so kale can absorb the dressing. Best prepared in advance and left to sit 2 hours or overnight.
Add cranberries and sunflower seeds just before serving. Variations include adding orange in the citrus mix, and changing toppings to include raisins, nuts, sliced apples, or Mandarin oranges.
